Apple and Goat Cheese Salad

Spinach and Mixed Baby Greens
Apple Pieces
Apple Chips to taste
Red Onion
Goat Cheese
Chicken
-Toasted Pecans (opt)
-Currants (opt)

Balsamic Dressing
Nordstrom Campaign dressing
Blueberry Pomegranate Dressing

Zuchini Bread

Mix:

3 eggs
1 cup oil
2 cups sugar
1 tsp vanilla


Seperate Bowl:
3 cups flour
2 tsp cinnamon
1/4 tsp baking powder
1 tsp salt
2 tsp baking soda

2 heaping cups zuchini

2 bread pans at 350 for 60 min.

Cookies

2 cups flour
1 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar
1/2 cup butter
1/2 shortening
1/2 cup sugar
1 lrg egg
2 tsp vanilla

7.5 oz macadamia nuts
Chocolate chips
Tosted coconut

Bake at 350 9-10 min

Chocolate Chip Cookies

Chocolate Chip Cookies

1 c. butter (2 sticks), softened
3/4 c. sugar
3/4 c. brown sugar
2 eggs
2 t. vanilla

2 1/4 c. flour
1 t. baking soda
1/2 t. salt

2 c. chocolate chips (I used white and milk chocolate chips)

Cream butter and sugars together. Add eggs and vanilla. Mix dry ingredients and add to creamed mixture. Stir in chocolate chips. Bake at 375 for 9 to 11 minutes. (I melted some extra white and milk chocolate chips and drizzled the cookies after they were cool.)

Cilantro Lime Chicken Salad

Lime and Cilantro Chicken Salad Chipotle-Lime Vinaigrette

1/3 cup seasoned rice wine vinegar
1/4 cup fresh lime juice
1 clove garlic minced
2 tsp chipotle chiles
2 tbls honey
1/2 tsp sea salt
3/4 cup olive oil
1 cup fresh cilantro
I put everything in my blender and just blend it!

2 Cups corn
1 1/4 pounds boneless, skinless chicken breasts, seasoned with salt and pepper, cooked and Julienned(I use black beans instead of chicken but it would be good with both)
1 1/2 cups diced tomatoes
1 pound mixed baby greens
2 cups (about 8 ounces) grated Jack cheese
1/2 cup chopped roasted red bell peppersea salt and black pepper
3/4 cup toasted salted pumpkin seeds
fresh cilantro sprigs for salad

Mutligrain Muffins

1 large egg or 2 egg whites

1/4 cup vegetable oil (I use either applesauce or coconut oil)

1 cup buttermilk

1/3 cup packed brown sugar (I use honey)

1/2 cup quick-cooking oats

1 cup unbleached white flour

1 cup whole wheat pastry flour

1/4 tsp salt1 tsp baking soda

1 tsp baking powder

Preheat the oven to 400

In a bowl, stir together the eggs, oil, buttermilk, brown sugar and oats.

In another bowl, combine the flours and salt and baking soda and powder mix well. Add the liquid mixture to the dry ingredients, and stir just until a smooth batter is formed.

Spoon the batter into oiled muffin tins and bake for 20 minutes until puffed and golden.

Variations (I always do one of these, I don't like them plain)

*Apple Muffins add 1/2 tsp of cinnamon to the dry ingredients, and fold 11/2 cup of chopped peeled apples into the finished batter

*Banana chocolate chip Muffins add 1 tbls of freshly grated lemon peel to the dry ingredients, and fold 11/2 cups of fresh or frozen berries into the batter

*Berry-Lemon Muffins add 11/2 cups of mashed ripe bananas to the wet ingredients. If you like fold 1 cup of chocolate chips or nuts into the batter

*Zucchini Muffins add 2 cups of grated zucchini to the wet ingredients and 1 tsp of cinnamon and 1/2 tsp of ground cardamom to the dry ingredients. Fold 1/2 cup raisins or currants and 3/4 cup of chopped nuts if you like into the batter

Peanut Chicken

1lb. chicken breast
1 onion, diced
1/2 c. peanut butter
1/4 c. Sweet chilie sauce
1/4 tsp. Cayenne Pepper
1 c. water Cook chicken, cut up into cubes, set aside. Oil pan, add onions (and any other veggies) cool until soft. Add PB, sweet chili sauce, cayenne. Slowly stir in water, stir until PB is melted. Add chicken.
Simmer for 5 min.

Serve with Rice. Note: Don't add cayenne and go easy on the chili sauce (1/2 + 1/2 later) preparing for kids. Then dish out serving and add the two seperately.

Christy's Healthy Cookies

1 stick butter
3/4 cup apple sauce
3/4 cup white sugar
3/4 cup brown sugar
3 egg whites
1 tsp vanilla
mix
1 cup whole wheat flour
1 cup unbleached white flour
1 tsp baking soda
1/2 tsp baking powder
1/2 salt
2 1/2 cups oatmeal
1 1/2 cups oat bran
1/4 cup wheat germ
1/4 cup flax seed grain
1/2 tsp cinnamon
1/2 tsp nutmeg
mix
Add 1/4 cup white choc. chips and or semi sweet/ dark choc. chunks
1/2 cup dried cranberries mix both dry and wet ingredients together with chips/berries. I do it with hands because it's easier- shape into golf ball size and bake at 350 for 12-15 min.
