Oatmeal Honey Bread

2 c. Quick oats (regular work fine too)
2 c. Boiling Water
1 c. Honey

Combine in mixer. Let set 2 min. Then add:

¼ c. butter or margarine
2 2/3 c. water
2 c. wheat flour
2 c. white flour(or bread flour)
1 Tbsp. salt
3 Tbsp. dry yeast
2 Tbsp. dough enhancer (opt.)
¼ c. gluten (opt.)

Mix together and then add:

5-6 c. white flour (or bread flour)
Add 1 cup at a time until it comes away from sides of bowl

-Knead on counter a couple times and Split dough into 4 equal lumps. Roll out in a square and then roll up like a cinnamon roll and place in greased bread pan.
-Place pans in an oven that has been on warm that you have TURNED OFF.
-Let rise in warm oven for 30-40 min. Cover loaves with a towel while rising.
-Turn oven to 350 and set timer for 25 -30 min. (this includes the pre-heating time) Take out when golden brown on top. Remove and cool on rack. Brush with butter if you wish.

Smokey Pesto Red Pepper Chicken Pockets

Chicken Breast, cooked and cut in pieces
Smoky Provolone Cheese slices
1/2 cup pesto
1/4 cup mayo
Green Onions
2 tsp fresh lemon juice
1 Jar of Roasted red peppers, drained and chopped
Pita pockets halved
Sliced Olives

Preheat oven to 350. In a bowl combine chicken, green onions, roasted red peppers, olives; mix. In a separate bowl combine pesto, mayo and lemon juice and mix. Add pesto mixture to the chicken mixture. Spoon into pita halves. Place sandwiches on cookie sheet and bake 7-10 minutes.

Goat Cheese Drop Biscuts

These biscuits give a warm welcome to diners at Art Smith's Chicago restaurant, Table Fifty-Two.

INGREDIENTS

2 cups self-rising flour
1 tsp. salt
4 Tbsp. (2 ounces) cold butter
4 Tbsp. (2 ounces) goat cheese
1 cup (8 ounces) buttermilk
Extra butter to grease pan and top biscuits
1/4 cup grated parmesan cheese

Preheat your oven to 425°. Place one 10-inch cast iron pan into the oven while it is preheating. Place flour and salt into a medium-sized bowl. Cut in the butter and goat cheese. Make a well in the middle of the ingredients and pour in the milk. Stir until the mix is moistened, adding an extra tablespoon of milk if needed.Remove the hot skillet from the oven and place a tablespoon of butter into it. When the butter has melted, drop 1/4 cupfuls of batter into the pan, (use a muffin scoop to drop the batter if you have one). Brush the tops of the biscuits with melted butter. Bake from 14–16 minutes until browned on the top and bottom. Remove from the oven and sprinkle with the grated cheese. Enjoy warm!

Chicken Enchilada Soup

2Tbsp extra virgin olive oil
1 medium onion finely chopped
2 14.5oz cans chicken broth
1 28oz can mild green enchilada Sauce
½ tsp cumin
½ tsp roasted garlic seasoning
1 4oz can diced green chilies
2 14oz cans diced tomatoes undrained
8oz sour cream
2 Cups shredded cheddar cheese
4 large boneless skinless chicken breasts cooked and cubed
1 Bag Tortilla ChipsPlace oil in
5qt dutch oven over medium high heat.

Place onions into hot oil and sauté for 3-5 minutes or until tender. Add chicken broth, enchilada sauce, cumin, garlic seasoning, green chilies and tomatoes. Stir and bring to a boil. Reduce heat to low then add sour cream, cheese, and chicken. Stir and let simmer for 15-20 minutes or until cheese is melted through. Top each soup bowl with a handful of crushed tortilla chips. Enjoy

Carmel Corn

Popped popcorn

2 1/2 cup brown sugar
1 cube butter
1/2 cup light Karo's Syrup
1/2 can sweet condensed milk.

-Cook on stove top until it boils
-Will thicken as it cools
-Pour over popcorn and stir.
-Serve immediately

Angel Hair Pasta

3-4 large chicken breasts

1/4 c. butter
1 dry italian mix
1/2 c. white wine
1 can condensed golden mushroom soup
4 ounce cream cheese w/chives
1 lb angel hair pasta

Preheat oven at 325*
In pot- melt butter
Stir in italian dressing
Add wine & Soup
Add Cream Cheese
Heat through- don't boil

Lay chicken breasts in 9x13 pan
Pour sauce on top of chicken

Cook in oven for 60 min.
Eat over angel hair pasta or rice.

Lasagna

10 lasagna noodles cooked

Meat sauce
1 sausage
1/2 lb hamburger
1 lrg can of ready cut tomatoes
1 lrg can tomato paste
1 tsp salt
1 Tbsp basil

Cheese Mixture
1 cup cottage cheese
1 15 oz can ricota cheese
1/2 cup parmasean
2 beaten eggs
1 Tbsp dried parsley
1 tsp. salt

Layer 5 noodles on bottom then top with 1/2 of cheese mixture, half meat, and moz. cheese
Repeat, noodles, cheese, meat, cheese

Bake at 350* for 10 min.
Let sit for 10 min.

Oatmeal Chocolate Chip Cookies

1/2 c. Butter
1/2 c. Butter flavored Crisco
3/4 c. Sugar
3/4 c. Brown sugar
2 Eggs
1 tsp Hot Water
2 tsp Vanilla
2 c. Flour
1 tsp. Baking soda
1 tsp. Salt
2 c. Oatmeal (Old Fashion)

1 package of semi-sweet/white chocolate chips
Add some milk chocolate to taste.
*Pecans & Coconut are great add-ins
*Also good with white chocolate chips and craisins

Cook at 350* for 8-10 min (or 10-12 min on stone)

Banana Bread

1/3 c. Oil (or Applesauce)
1 1/2 c. Sugar (or 1/2 sugar & 1 cup Splenda)
1-2 tsp vanilla
1/3 c. milk
3 eggs
3-4 ripe bananas
2 c. flour
1/2 tsp salt
1/2 tsp soda
1/2 tsp baking powder

**pecans & coconut are great additions
50 min at 350*

Chicken Nachos

2 Cans Diced Tomatoes with Sweet Onions
2 Cans Pinto Beans
1 Can Kidney Beans
1 Packet Mild Taco Seasoning
1 Packet Ranch Seasoning
3-4 Shredded Chicken Breasts

Whole wheat tortilla chips taste the best.
Top w/ cheese
Guacamole & Sour Cream to taste.
